How to make karak chai the traditional way

  1. Bring water to the boil in a pan with a couple of crushed cardamom pods.
  2. Add loose black tea and let it boil for a few minutes until very dark.
  3. Pour in milk and sugar and bring back to the boil.
  4. Let it rise and fall a few times, simmering until it thickens and turns a rich caramel colour.
  5. Strain into cups and serve hot.

It is delicious – but it takes time, a pan to wash and a watchful eye so the milk does not boil over.
